That time of year has come again, and this is your reminder that the attitude (yours, mine, and everyone else’s) should be aimed towards gratitude!
To show appreciation for all of you fellow Aruba lovin’ foodies, I’ve decided to share four traditional Thanksgiving-inspired vegan dishes and two sauces to try out if you want to cook an easy and healthy, but scrumptious meal to give thanks this year.
For the ones who prefer service rather than a chef’s hat, and don’t have as much time on their hands, I’ve also compiled a couple of vegan options to try that will get you in the holiday spirit with the help of some yummy flavors.

Garden Herb Biscuits
A few options that could help you with this recipe:
Recipe Ingredient-needs: all-purpose flour, baking powder, salt, black pepper, parsley, chives, thyme, vegan butter, vegan cream cheese, carrots, zucchini, non-dairy milk & apple cider vinegar.
Green Bean Casserole
A few options that could help you with this recipe:
Recipe Ingredient-needs: green beans, black pepper, olive oil, shallots, garlic cloves, mushrooms, all-purpose flour, vegetable broth, unsweetened almond milk & crispy fried onions.
BONUS: you can also find vegan-friendly Panko at Ling & Sons Aruba to make your own french fried onions (yum!)
Tofu Turkey
A few options that could help you with this recipe:
Recipe Ingredient-needs: firm or extra-firm tofu, sage, thyme, rosemary, vegetable broth powder, poultry seasoning, balsamic vinegar, red wine, Dijon mustard, soy sauce and vegan stuffing (this is up to your flavor preferences, but here’s an example).
Cranberry Sauce
A few options that could help you with this recipe:
Recipe Ingredient-needs: sugar, water, cranberries, orange zest & salt.
Mushroom Gravy
A few options that could help you with this recipe:
Recipe Ingredient-needs: extra virgin olive oil, onions, mushrooms, salt, ground black pepper, thyme, sage, rosemary, all-purpose flour & vegetable stock.
BONUS: you can support the local community by getting locally-grown mushrooms like the ones pictured above.
Pumpkin Tarts
A few options that could help you with this recipe:
Recipe Ingredient-needs: walnuts, shredded coconut, coconut oil, maple syrup, salt, pumpkin puree, almond milk, Medjool dates, vanilla, cinnamon, ground ginger & ground cloves.
BONUS: this is a no-bake recipe, talk about a winning dessert!

P.S. for those of you who don’t know, Ling & Sons Food Market had a makeover in 2019 which also included quite the expansion of their vegan section (just check out the image above to get a glimpse). Enjoy a Vegan Sweet Potato Bowl and a good cup of Joe at Holiday Inn Aruba’s Puro Coffee to get into that Thanksgiving vibe. WARNING: their coffee will bring you back to reality if you’re a daydreamer. LOL!
THEN, SHARE A VEGAN CARROT CAKE
Dessert Destination: Cuba’s Cookin’
Opening Hours: 8.30AM – 10PM
You can share a piece of their glorious Vegan Carrot Cake, or not, but do share the good vibes with your loved ones! Do whatever makes your heart happy…just remember ’tis the season to be grateful – whether it’s for yummy food, or showing appreciation for your favorite people: gratitude should be the attitude.
