Bolo di Banana (Plantain Pudding)

Ingredients

  • 5 very ripe plantains
  • 1/3 cup of butter
  • 2 1/2 cups of brown sugar
  • 2 Tbs. water
  • 1/2 lb. sharp yellow cheese
  • 1/2 cup cracker crumbs
  • 2 tsp. cinnamon
  • 1 1/2 tsp. all spice
  • 1/2 cup raisins
  • 1/2 cup dry sherry

Directions

Peal and cut in half lengthwise:

  • 5 very ripe plantains

Melt in a heavy skillet:

  • 1/3 cup of butter

Fry the plantains until golden brown and remove from the skillet.

Stir into the drippings until the sugar is dissolved:

  • 2 1/2 cups of brown sugar
  • 2 Tbs. water

Remove from the heat.

Mash the plantains well, adding the brown sugar mixture.

Grate and add to the plantains:

  • 1/2 lb. sharp yellow cheese

Preheat oven to 350°F,Stir in:

  • 1/2 cup cracker crumbs
  • 2 tsp. cinnamon
  • 1 1/2 tsp. all spice
  • 1/2 cup raisins
  • 1/2 cup dry sherry

Mix the ingredients well and pour into a well buttered casserole.

Bake for about 40 minutes.

Do not permit the pudding to become dry.
